      1. Heat oil in a thick skillet. Add finely chopped onions and saute them till they become translucent.
      2. Add some chopped ridge gourd pieces and fry it. Again add some more and fry it for 2 minutes.
      3. Add salt and saute it for another minute.
      4. Add turmeric powder and mix it well. Cover it with a lid.
      5. Fry till all the water content in the curry evaporates or till the quantity becomes one-third.
      6. Add red chilli powder and saute it for 2 minutes.
      7. Yummy beerakaya fry is ready to eat with rice.
